Our 9 Ingredient Easy Sweet Potato Pumpkin Soup

It’s hot right now in Puerto Rico and while soup may seem like a funny choice this soup we make it early in the day, eat it warm and are offered the entire evening to get out of the kitchen and enjoy the cool breeze we have been waiting for all afternoon. In the heat of summer our digestive capacity goes down. We have talked about this, alongside the best tastes for the summer season on our YouTube Channel. So eating something slightly sweet, nourishing and easy to digest feels great at the end of the day. No strange food combos. Simple ingredients and absolutely delish.

Spices are emphasized in Ayurvedic approaches to cooking with the reason being that they stimulate the digestive fire so you can transform food to nutrients. A spice-less diet is not only kind of boring but it offers little spark to your central gastric fire and makes the body work extra hard in processing. That being said sometimes too much spice has the opposite effect, confusing the system, creating too much heat and eventually drying us out, burning us up and making us feel weak instead of nourished. This soup offers the perfect balance between flavor and simplicity. It’s not only our go to for an easy meal, it also provides the digestive ease we often crave after travel days, cleanse programs and for deep nourishment you can feel. We have another favorite Curry Sweet Potato Soup with Medicinal Mushrooms that adds layers of earthy flavor which we gravitate more towards in the fall season. This dish is similar but very different in preparation and physiological effect on the tissues of the body when you feel like you need a break from it all.

Pumpkin Sweet Potato Soup

Prep Time: 5 Minutes 

Cooking Time: 30 Minutes

Total time: 35 Minutes

Servings: 4 full meals, 8 side dishes

Ingredients

Pumpkin Sweet Potato Soup

1 Large Yellow Onion

1 Thumb Ginger

4 Cloves Garlic

1/4- 1/2  Pumpkin or 1 Butternut Squash (2 1/2 cups)

1 Sweet Potato or Yam

2 Tablespoons Curry Powder

2 teaspoons bouillon paste or 2 cubes or substitute veggie broth for water

1-2 cups fresh coconut milk or 1 can

1 Tablespoon Coconut Oil

Instructions
  1. Chop all ingredients into chunks
  2. Sauté onion, garlic, ginger in coconut oil for 3-5 minutes stirring occasionally. Add sweet potato and curry powder allowing spices to become aromatic. Add pumpkin, bouillon and water or stock until it JUST covers the vegetables. Do not use too much water or it will make soup too thin.
  3. Bring to a gentle boil, cover and lower to a simmer for 20 minutes or until vegetable are soft.
  4. Let cool slightly.
  5. Make coconut milk or open a can and blend into soup with an immersion blender (hand held blender) until desired consistency. We like to let the soup sit for a bit to set.
