Indulge in the ultimate cozy breakfast with our Creamy Coco-Apple Oats, a family favorite that’s perfect for chilly mornings. We love sweet oats, savory oats, teff, cream of wheat, barley, rice porridge you name it. Over the years we’ve mastered a few tried and true recipes. And this one came as a surprise on our Sedona retreat when my daughter Naiyanna catered the entire event. Even though the weather dipped to chilly morning and evening temps we ate almost every meal by the beautiful outdoor fire pit and she leaned in to the ultimate cozy, warm up recipes including this creative Coco-Apple Oats. Coco-Apple Oats: The Secret Is In the Sauce
Master of flavor layers, Naiyanna, elevates this breakfast classic by infusing it with a special ingredient straight from our garden: coconut milk. Whether you’re using freshly prepared coconut milk from homegrown coconuts or the convenience of canned coconut, the result remains delightful. This unique addition not only adds a creamy texture but also a depth of flavor that makes the Coco-Apple Oats a standout dish. Especially enjoyed during our retreat, this recipe brought a taste of homemade comfort, proving that sometimes the simplest ingredients make the biggest impact in a meal.
Making Coconut Milk
If you are lucky enough to find yourself in the land of coconuts you can make fresh milk from either dried brown nuts or green ones that have a firm layer of jelly hardened enough to extract the meat. Simply machete it open. Scoop it out. And be sure there are no lingering pieces of the shell. Place the coconut meat in the blender and cover with water until it is just slightly over the coconut meat. Blend, strain and voila you have coconut milk! Step 1: Coco-Apples
Chop the apples into bite sized pieces and place in a small pot. Barely cover with water. Bring to a boil and reduce to simmer slowly reducing water and softening apples. Add 1 TBL maple syrup or brown sugar, 1/2 tsp cinnamon powder and 2 clove buds. When the water is reduced by half, add 1/2 cup fresh coconut milk. Allow this to simmer for an additional 5 minutes, melding the flavors into a delightful concoction that sets the stage for an unforgettable oatmeal experience.
Step 2: Make the Oats
Cooking oatmeal is straightforward and satisfying. Especially when following the package instructions as a starting point. Typically, it suggests combining 1/4 serving of oats with 1 cup of water and a pinch of salt for the perfect balance. Bring this mixture to a boil. Then lower the heat to let it simmer gently, a key step in achieving that creamy texture everyone loves. Enhance this basic recipe by adding a unique blend of flavors: 1 bay leaf, a cinnamon stick, 2 cardamom pods, and a handful of chopped dates. These ingredients infuse the oatmeal with aromatic spices and a natural sweetness. This creates a rich and comforting breakfast experience. Continue to simmer until the water reduces to your desired consistency, ensuring each spoonful is packed with flavor and warmth.
