
Gulkand- Sweet Sun Preserved Rose Petals
Making gulkand feels like a preparation of food for the Gods. Layers of soft rose petals with sugar set out in the sun to cook followed by cooling in the soft moon light makes this magical sweet treat joyful in both preparation and consumption.
During the summer time the sweet taste can be utilized to soften the system and cool us down on warm days. Gulkand is used as an afternoon snack and is known to improve memory, digestion, purification and relieve irritation of the skin.

- Fresh Rose Petals
- Cane Sugar or Jaggery
Instructions
1.
Be sure to use roses freshly harvested from an area you know to prevent use of pesticides or fertilizer.
2.
In a clean glass jar layer petals and sugar to the top. Shake to combine.
3.
Let jar sit outside in a sunny area. Shake daily adding new layers as the rose petals “cook” and settle. Repeat process for 10 days.
4.
Jar can then be kept in the refrigerator and gulkand can be enjoyed in small amounts as an afternoon treat.
